Lioco is a fascinating project, conceived in 2005 with the aim of making nuanced wines from truly special Californian vineyards. Fruit is sourced from over 400 sites, each of them deemed to have characteristics akin to Premier or Grand Cru quality in Europe. Grapes for this Chardonnay came from cooler, western areas in Sonoma County; these cool climates have translated to flavours of lemon custard, stone and fresh thyme. Pair this with fried fish dishes.
