Cambridge Distillery never fails to turn any product into the best and most bonkers things it can be. The cask used here – from a top-secret château in Margaux – pushes all boundaries of gin artistry, taking aromatics to another level. The texture is mouth-filling and waxy, with a curious edge reminiscent of delicate tannins. The bouquet is pure and incredibly decadent, with notes of pomegranate, lemon and orange blossom. This intensity builds with violets and iris. Beyond the delightful floral and red fruit aromas is a spicy undertone with a touch of cedar bark. As with so many gins from this distillery, the finish defies the impossible and stays with me long into the afternoon.
