Joseph Colin is a tiny but incredibly exciting winemaker in St Aubin. Working on just six hectares, he does everything manually, avoiding any herbicides or chemicals. This Chassagne comes from three parcels of vines, from elevated plots. Limestone in the soils here help coax out a freshness in this wine, that blends beautifully with the apple and white blossom flavors.
