2022 Champagne Clandestin, Austral, Brut Nature

The Boreal and Austral range shows the importance of vineyard aspect on Champagne style. Austral comes from grapes sourced solely from south-facing, mid-slope, Kimmeridgian soil vineyards. While still 100% Pinot Noir, it’s much warmer on the nose than the Boreal. It has an almost solar character: fruit-forward, with notes of lemon, orange peel and ripe white flowers. The palate is more precise, with flavours of red apple, pear and citrus fruit; there are also some savoury umami notes and a lifted finish.
