Chardonnay is arguably the most versatile white grape variety in the world. Grown globally and beloved for its adaptability, it can produce wines that range from crisp and mineral to rich and opulent. It thrives in a wide range of soils but performs best in limestone-rich terroirs, such as those found in Chablis, Champagne, and the Côte d'Or.
Few grapes capture both delicacy and intensity like Riesling. Celebrated for its perfumed aromatics and razor-sharp acidity, this noble variety is capable of a remarkable range: from bone-dry, mineral-driven whites to unctuous, long-lived sweet wines. Whether grown on the slate slopes of Germany, the volcanic hills of Alsace, or the sunlit vineyards of the New World, Riesling expresses a sense of place like no other grape.
Nebbiolo is the grape behind the Barolo and Barbaresco wines and is hardly ever seen outside the confines of Piedmont. It takes its name from "nebbia" which is Italian for fog, a frequent phenomenon in the region.
A notoriously pernickety grape, it requires sheltered south-facing sites and performs best on the well-drained calcareous marls to the north and south of Alba in the DOCG zones of Barbaresco and Barolo.
Pinot Noir is probably the most frustrating and, at times, infuriating wine grape in the world. However, when it is successful, it can produce some of the most sublime wines known to man. This thin-skinned grape, which grows in small, tight bunches, performs well on well-drained, deepish limestone-based subsoils.
It is more susceptible than other varieties to overcropping - concentration and varietal character disappear rapidly if yields are excessive, and yields as little as 25hl/ha are the norm for some climats of Burgundy's Côte d'Or.

Cognac is a grape brandy produced in the French region of the same name. The permitted grape varieties include Ugni Blanc (predominantly), Folle Blanche and Colombard. According to the appellation regulations, Cognac must be distilled twice in traditionally shaped Charentais copper pot stills and aged at least two years in French oak.
